Chocolate Chip Coconut Bars

These chocolate chip bars are similar to chocolate chip bars, but with a coconut based batter. Delicious to eat fresh out of the oven.


Ingredients

  1. 3/4 cup almond flour
  2. 1/4 cup coconut flour
  3. 1/2 cup unsweetened shredded coconut
  4. 1/2 teaspoon baking powder
  5. 1 teaspoon xanthan gum optional
  6. 1/2 cup butter melted
  7. 1/2 cup golden low carb sweetener or other brown sugar alternative
  8. 2 eggs beaten
  9. 1/2 cup almond milk
  10. 1 1/2 teaspoons vanilla extract
  11. 1/2 cup sugar free chocolate chips

Instructions

  1. Combine almond meal, coconut flour, unsweetened coconut, baking powder, and xanthan gum (if using) in medium bowl.
  2.  In another bowl, whisk together butter, sweetener, eggs, almond milk, and vanilla extract.
  3.  Pour butter mixture into dry mix and stir together until well combined.

Caramelized Banana & Peanut Butter Oatmeal

Oatmeal cooked with chia seeds, peanut butter, vanilla and maple syrup and served with caramelized bananas and nuts.

Ingredients

  • 3 ½-4 cups water
  • 1 ½ cups old-fashioned rolled oats
  • ½ cup chia seeds
  • ½ Tbsp. ground cinnamon
  • 1 tsp. pure vanilla extract
  • ½ tsp. coarse salt
  • ½ cup natural peanut butter
  • ½ cup milk of choice + more for serving
  • 3 Tbsp. pure maple syrup + more for serving
  • 2 Tbsp. butter
  • 1 tsp. brown sugar
  • 3 yellow bananas, peeled and sliced
  • ½ cup chopped walnuts and/or sliced almonds

Instructions

  1. Bring water to a boil in a large saucepan. Pour oats and chia seeds into the water, bring to a boil, then reduce to a simmer for about 5 minutes, stirring frequently, until oats are soft.  Remove from heat and stir in cinnamon, vanilla extract, salt, peanut butter, milk and maple syrup until combined.
  2. In a medium skillet, melt butter and brown sugar at medium-high heat.  Add sliced bananas and cook 1-2 minutes per side, until browned, flipping once.
  3. Scoop oatmeal into bowls and top with milk and maple syrup, as desired, and walnuts/almonds and caramelized bananas.
